Cherry Smoked Chipotle
Pepper-Licious matures our home grown Jalapeños on the plant until they are fully red in color or that unique red-green as the growing season ends. We then cut open the fruit so that when it is put in the smoker it can fully take the Cherry flavor and aroma into the meat of the pepper.
Why Do We Go Red?
We do this for three primary reasons.
First, to let the sweetness of the pepper mature.
Second, to let it gain the extra heat that comes on with maturity. This is not a blazing heat but it is what differentiates the fresh green jalapeño from the dried or Chipotle jalapeño.
Third, is that the fruit is usually larger, meatier and absorbs the Cherry smoked flavor in a way that it smooths the common yet distinct jalapeño smell and flavor.
Overall it is about the taste! If you love a smoky cherry flavor, then we highly recommend our Chipotle as a mainstay in your kitchen. Our powder is that cherry smoky, earthy flavor enhanced by our careful smoking process. Additionally, letting our peppers mature to red brings an underlying sweetness that comes from the extra time the jalapeños had on the vine. Red jalapeños are sweeter than unripened green jalapeños which has a brighter, grassier flavor).

Chipotle chilies are another name for jalapeños. Specifically: they are ripe red jalapeños that have been dried and smoked.
